What should I do with all those apple skins?

I’m going to make apple pie and apple sauce. It seems like such a waste throwing away all those skins… Any ideas on how to use them?

Dry them and make potpourri.

Arrange the fruit slices and peelings so that they are evenly placed on the cookie sheet, without overlapping each other.
Drying the Fruit
Step1
Set oven to 250 degrees and place cookie sheet with fruit pieces and peelings into the oven.
Step2
Bake fruit approximately 2 (two) hours, or until they are dried.
Step3
Check on fruit mixture every 30 (thirty) minutes, making sure the fruit does not cook, that it only dries. (If you can hear the fruit sizzling, try turning the oven temperature down until you can no longer hear the fruit sizzle).
Creating the Potpourri
Step1
Place fruit mixture into resealable bag.
Step2
Add 1 (one) Tablespoon of salt, and one teaspoon of the sweet smelling spices you have chosen.
Step3
Close the bag and shake well.
Step4
Let the bag sit overnight.
Step5
Dispense potpourri into your favorite container and enjoy the fruity scent.
